PINEAPPLE MUFFINS 
2 c. flour
1/2 c. sugar
1 c. crushed pineapple, undrained
4 tbsp. cooking oil
4 tsp. baking powder
1/2 tsp. salt
1 egg

Beat egg with fork. Add oil and pineapple and mix well. Add dry ingredients and mix only until blended. Don't over beat. Lightly grease muffin tin. Fill 1/2 to 3/4 full. Bake at 400 degrees for 20 minutes. Makes 1 dozen.
