APPLE MUFFINS 
4 tbsp. butter
1/4 c. brown sugar
1/2 c. sugar
1 egg
1 c. buttermilk
1 3/4 c. flour (can substitute bran flakes)
2 1/4 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
1 lg. apple, peeled, cut
1/3 c. brown sugar for topping

Preheat oven to 400 degrees. Grease a 12-hole, full size muffin tin. Cream butter and sugars until fluffy. Mix in egg. Fold in buttermilk, do not over mix or batter will curdle.

In separate bowl, mix flour, cinnamon, baking soda and salt. Add gradually to sugar-egg mixture, no lumps, add apple chunks. Fill nearly to top and put extra brown sugar on top. Cook 15 minutes.
