APPLE AND DATE MUFFINS 
1 1/2 c. whole wheat pastry flour
3/4 c. bran
2 tsp. baking powder
1/2 tsp. cinnamon
3/4 c. chopped firm, tart apples
1/4 c. chopped dates
3/4 c. skim milk
1/2 c. honey
2 eggs, beaten (or use egg substitute)

Place the flour, bran, baking powder and cinnamon in a large bowl and stir together until combined. Add the apples and date and toss to coat with the dry ingredients. Combine the milk, honey and eggs in a small bowl. Stir into the dry ingredients until combined. Divide the batter among 12 muffin cups coated with nonstick spray. Bake in a preheated 375 degree oven for 15 to 20 minutes; until browned. (Makes 1 dozen muffins, 117 calories per muffin.) These freeze beautifully.
