BANANA BREAD 
3 c. Bisquick baking mix
2/3 c. sugar
1/3 c. flour
1 egg
1/2 c. milk
1 c. very ripe bananas, mashed (2 to 3 bananas)
1/2 c. chopped nuts (optional)
1/2 c. cut up dried apricots (optional)

Heat oven to 350 degrees. Combine baking mix, sugar, flour, egg, milk and bananas. Beat vigorously for 30 seconds (stir in nuts and apricots, if using.) Pour batter into greased loaf pan, 9 x 5 x 3. Makes 1 loaf.

Bake 50 to 60 minutes, or until wooden pick inserted in center comes out clean. Very good served hot with butter.
