VEGETABLE PIE | |
1 lb. fresh mushrooms, sliced 1 onion, sliced 2 zucchini or yellow squash, sliced 3-4 tbsp. butter 1/4 tsp. black pepper 1 (10 inch) pie shell, prebaked at 350 degrees for 20 minutes 1 tomato, sliced 1 c. Mozzarella cheese, grated 1 green pepper, sliced 1 tsp. salt Dash of garlic salt 1 c. mayonnaise Saute vegetables in butter until crisp, but not soft. Drain well. Add seasonings. Place tomato slices in bottom of prebaked pie shell. Add vegetables. Spread mayonnaise-cheese mixture over vegetables. Bake uncovered at 325 degrees for 45-60 minutes or until golden brown. |
