SHRIMP FETTUCINI 
2/3 c. pure olive oil
2 onions, finely chopped
3 cloves garlic, minced
3/4 c. celery, chopped
3/4 c. bell pepper, chopped
1 sm. can tomato paste
1 sm. can tomato sauce
1/4 tsp. sugar
1 can mushrooms, sliced
1 c. red wine
3 c. boiled shrimp, peeled
2 tbsp. parsley
1/2 c. green onion, chopped
Pinch of sweet basil
1 lb. boiled fettucini, drained
Grated Parmesan cheese

In large heavy pot, saute onions, garlic, celery and bell pepper in oil until onions are clear. Add tomato paste, sauce, sugar, mushrooms and red wine. Simmer until oil comes to top. Add cooked shrimp and parsley, green onions and basil. Continue cooking over low heat about 20 minutes. Serve over hot fettucini. Sprinkle cheese over top of fettucini before serving. Serves 6 to 8 people.
