CHICKEN CASSEROLE 
3 chicken breasts with bone
1 pkg. rice-a-roni (fried rice with almonds)
1/2 c. chopped celery
1/2 c. chopped onion
1/4 c. mayonnaise
1 can creamed chicken and mushroom soup
1 lg. can French fried onion rings or potato chips (crushed)

Boil chicken - save broth.

Fix rice-a-roni according to package substituting chicken broth for water. Brown rice in butter. Saute celery and onions then mix with rice. Add mayonnaise and soup.

Place in 1 1/2 quart casserole dish. Bake 350, 1/2 hour. Top with onion rings or potato chips. Brown slightly. Serves 4.

I've been making different versions of this casserole for many years. It's always good no matter what you add. I have added water chestnuts, canned green peas, and canned green beans to the recipe, which makes a complete one dish meal. My children loved this growing up.
