CHINESE PEPPER STEAK 
1 lb. round steak
1/4 c. butter
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
4 tbsp. soy sauce
1/2 tsp. granulated sugar
1 (14 oz.) can bean sprouts rinsed and drained
2 tomatoes, cut into eights
2 green peppers cut into thin slices
1/2 tbsp. cornstarch
2 tbsp. cold water
6 green onions, chopped
Rice

Slice steak as thinly as possible in crosswise pieces. Heat butter in skillet. Add garlic, salt and pepper. Add beef and cook until brown on both sides. Add soy sauce and sugar. Cover, cook over high heat for 5 minutes.

Add bean sprouts, green peppers and tomatoes. Cover, cook for 5 minutes. Dissolve cornstarch in cold water. Add to cooked mixture. Cook, stirring until sauce is thickened. Sprinkle with chopped green onions. Serve with rice.
