MOM'S HOMEMADE ROLLS
1 1/2 c. scalded milk
2 tbsp. sugar
1 1/2 tsp. salt
1/3 c. shortening
2 pkg. dry yeast
1/3 c. very warm water
1 egg, well beaten
4 1/2 to 5 c. all-purpose flour
Melted butter

Combine milk, sugar, salt, shortening. Let stand until lukewarm. Dissolve yeast in warm water. Add to milk mixture. Stir in egg. Gradually add enough flour to make a soft dough, leaves sides of bowl. Cover with towel and let rise in warm place until it doubles in bulk, about 45 minutes.

Punch dough down and turn out on a lightly floured board or pastry cloth. Knead lightly. Roll out dough and shape rolls. Place in or on lightly greased baking pan and let rise, about 45 minutes. Bake at 425 degrees for 10 to 15 minutes. Makes about 3 dozen depending on shape.
