PORK CHOPS WITH CORN DRESSING 
4 lean pork chops
2 tbsp. fat
Salt & pepper
1/2 c. onion, chopped
1/4 c. celery tops, minced
2 c. soft bread crumbs
1 sm. can cream style corn
1/2 tbsp. thyme
Green pepper or Pimento, chopped

Brown chops lightly in hot fat in heavy skillet. Sprinkle with salt & pepper, remove to oven-proof platter or baking dish. In skillet, in leftover fat from chops, cook onion, celery and green pepper for 2 minutes. Remove from stove and add remaining ingredients, season to taste. Stir lightly with fork and pile on top of chops. Pour 1/3 cup water around chops and bake at 350 degrees for 40 minutes.
