ZUCCHINI CASSEROLE 
1 pkg. Stove Top chicken stuffing mix
5 c. diced zucchini
1 diced onion
1 diced green pepper
1 can cream of chicken soup
1/2 c. sour cream
Ritz cracker crumbs

Make stuffing according to package directions. Place in bottom of large casserole. Boil zucchini, onion and green pepper until tender. Drain. Add soup and sour cream. Put vegetable mixture on top of stuffing mix. Top with Ritz cracker crumbs. Bake at 350 degrees for 30 minutes.
