ZUCCHINI CASSEROLE 
3 sm. zucchini, cut in 1/2 inch chunks, then quartered
1 sm. onion, chopped
1 can cream of chicken soup
1 soup can water
1 pkg. Stove Top chicken stuffing
Velveeta cheese

In 1 tablespoon butter, saute zucchini and onion for about 10 minutes. At the same time, prepare stuffing according to the box directions.

In casserole dish, combine soup and water and mix together. Stir in sauteed zucchini and onion. Top with thin slices of cheese, completely covering top. top cheese with stuffing. Lightly pat the stuffing into the bake mixture, but be careful not to completely submerge stuffing. Bake at 350 degrees for 25 minutes. Great with chicken, steak, roast and even fish. Serves 4 to 6.
