YELLOW SQUASH PIE 
5 med. yellow squash, sliced
1/4 c. melted butter
3/4 c. sugar
1 tbsp. lemon extract
1 tbsp. flour
2 eggs, beaten
Dash of salt
1 unbaked pie shell

Cook squash, drain and mash. Mix all other ingredients together. Add squash. Pour into pie shell and bake at 375 degrees for 20-25 minutes or until firm.
