MUSTARD POTATOES 
2 garlic cloves, crushed
2 tbsp. butter
2 tbsp. olive oil
3 red potatoes, unpeeled and thinly sliced
Salt
Freshly ground pepper
Paprika
2 tbsp. Dijon mustard

Saute the garlic in butter and oil until soft. Add the potatoes and saute until brown on both sides, one layer at a time. When done transfer to a plate and set aside. Add the onion to the remaining oil and saute until soft. Pour off the oil and return the potatoes to the pan with the onion. Season to taste with salt, pepper and paprika. Add the mustard and toss carefully to coat all the potatoes. Serve immediately. Serves 4.
