ASPARAGUS A LA NEWBURG 
2 tbsp. butter
1 c. cream
A little cayenne pepper
Salt to taste
3 egg yolks, well beaten
Asparagus tips or cut into sm. pieces (cooked)
1 tsp. Worcestershire sauce

Melt butter. Add salt, pepper, cream and cook 5 minutes. Add egg yolks, asparagus and sauce. For a more substantial dish, add cut-up chicken. With the chicken, sherry might be used instead of Worcestershire sauce, more than a teaspoon, however.
