CARROT CAKE 
1 pkg. carrots, cooked and mashed
3 c. flour, sifted
2 c. sugar
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1 1/4 c. cooking oil
4 eggs
3/4 c. chopped walnuts
3/4 c. raisins

Put dry ingredients together with mashed carrots. Add 1 1/2 cups cooking oil. Mix well. Add eggs. Mix with raisins and walnuts. Mix well. Bake at 350 degrees in ungreased tube pan or oblong pan for 75 minutes.

FROSTING:

3 oz. cream cheese
1 tbsp. milk
1 tsp. vanilla
2 1/2 c. confectioners' sugar

Blend cream cheese, milk, vanilla and salt. Gradually add sugar beating until smooth. If necessary add more milk 1 teaspoon at a time. Frost top of cake.
