PATRICIA'S STUFFED TURKEY ROLL 
This is easy and tasty!

4 turkey or chicken cutlets
1 box Stove Top stuffing
1 (15 oz.) can cranberry sauce (Whole Berry is the best!)
salt and pepper, to taste
non-stick cooking spray (Pam)
butter
lettuce leaves

Prepare the Stove Top stuffing according to package directions. You can add extra butter and sage to make it more flavorable. Set aside to cool.

Take the cutlets and beat with a meat mallet. The cutlets should be flat and twice the size they were. Season with salt and pepper to taste and then put a large spoonful of stuffing in the center.

Place in a dish lined with foil. Spray the foil with non-stick cooking spray (Pam) and then place the cutlets seam down. Spread butter over the top and top with lettuce leaves and seal the tinfoil.

Note: The lettuce, butter and foil help to keep it moist.

Bake at 350°F until the meat is done (165°F on meat thermometer).

Remove from oven. After letting the meat rest you can serve whole or you can slice and arrange on plate. Top with cranberry sauce and serve.
