PAKORAS 
2 1/2 c. gram flour (Besan flour)
1 1/2 tsp. fresh crushed garlic
1 tsp. fresh crushed ginger
1 tsp. fresh crushed green chilies
1/3 c. fresh chopped cilantro
1 1/2 tsp. salt (more or less to taste)
1 1/2 tsp. sugar
1/2 tsp. turmeric
1 tsp. red hot chili powder (more or less to taste)
1 tsp. ground coriander
1/2 tsp. ground cumin
1/2 tsp. fresh ground black peppercorn
1 1/4 c. warm water (add more water if thick)
3-4 cups oil for deep frying
Assorted vegetables (see below)

Add to the flour all the above ingredients and mix well. Add water and make a medium batter. Heat oil and dip vegetables in batter and deep fry, light golden brown. Serve hot.

You may use any of the following vegetables or you may use a variety of all:

Potatoes, peeled & sliced thinly (1/8")
Onions, peeled & sliced thinly (1/8")
Zucchini, do not peel, but slice thinly (1/4")
Bananas, peeled & sliced (1/2")
Bell pepper, cut in long strips (1/2")
Spinach, leaves washed & dried
Sweet potato, thinly sliced (1/4")
