ZUCCHINI ROUNDS 
2 tsp. butter and vegetable oil for frying
1/3 c. Bisquick
Dash of pepper
1/4 c. grated Parmesan cheese
2 eggs, beaten
2 c. finely shredded zucchini

Stir together Bisquick, pepper, Parmesan. Stir in beaten eggs. Fold in zucchini. Drop from tablespoon into hot butter/oil. Cook 2 or 3 minutes on each side until brown. Makes 12.
