BAKED POTATO SOUP 
2/3 c. butter
2/3 c. flour
6 c. skim milk
3/4 tsp. salt
1/2 tsp. pepper
insides of 4 baked potatoes
12 slices of cooked bacon
1/4 c. shredded Cheddar cheese
green onions
sour cream

Make roux with butter, flour, milk, salt and pepper. Add the insides of the potatoes, bacon and cheese to the roux. Heat thoroughly and garnish with green onions and sour cream.
