VERY HEALTHY COOKIES (Good too) | |
1/2 c. smooth peanut butter 1/3 c. sugar 1/3 c. packed brown sugar 2 tbsp. butter, room temp. 1/2 tsp. vanilla 1 egg 1 c. rolled oats 1/3 c. flour 1/2 c. wheat flour 1 1/2 tsp. baking soda 1 apple, shredded 1 carrot, pared and shredded 1/2 c. raisins 1/2 c. chopped pecans 1. Cream peanut butter, sugars, butter and vanilla. Beat in egg until blended. 2. Blend in oats, flours and baking soda until thoroughly combined. 3. Stir in apple, carrots, raisins and nuts until blended. Roll into 1 inch balls; place on greased cookie sheet. Flatten with fork. 4. Bake 400 degrees 8 to 12 minutes or lightly brown. |
