RAISIN ALMOND CAKE | |
1 c. sugar 1/2 c. butter 2 eggs 1 1/2 c. all-purpose flour 1 1/2 tsp. baking powder 1/2 c. milk 3 c. chopped fresh, pared apples 1/2 c. dark raisins 1/4 c. chopped almonds 4 tbsp. sugar 1. Cream sugar and butter until light. Add eggs and beat until fluffy. 2. Stir in flour and baking powder alternately with the milk. 3. Fold in apples, raisins and almonds. 4. Spread into 2 buttered and sugar-dusted 8 or 9 inch round cake pans (or 1 (13 x 9 inch) buttered cake pan). 5. Sprinkle with additional sugar, spreading 2 tablespoons over top of each layer cake or all 4 tablespoons over large cake. 6. Bake at 350 degrees for 35 minutes or until cake tests done in the center. |
