CHUNKY FRENCH ONION SOUP 
3 c. sliced onions
1 tbsp. butter
3 c. broth
1 bay leaf
1/4 tsp. freshly cracked black pepper
2 tbsp. minced green onions
4 slices toasted French bread
1/2 c. grated Parmesan cheese

Saute onions with butter in bottom of pan over medium to medium-low heat until dark golden brown. Add broth, bay leaf and pepper. Cook on simmer, covered, 45 minutes or longer as desired. Add green onions. Taste and adjust seasonings. Serve over toasted French bread, topped with 2 tablespoons cheese.

Serves 4.
