FRENCH ONION SOUP 
1 tbsp. butter
1 med. onion, sliced
2-1/2 c. beef broth
2 slices toasted French bread
1/4 c. grated Swiss cheese
Salt & pepper to taste

Melt butter in small saucepan over medium heat. Add sliced onion. Saute until tender and golden brown. Add broth and simmer 15 minutes. Season with salt and pepper. Place toast in 2 heat-proof soup bowls. Pour soup over toast. Sprinkle with cheese. Place under broiler until cheese melts.
