SHAMROCK PIE 
1 c. crushed creme filled chocolate cookies or just plain chocolate cookie crust
2 tbsp. butter
6 tbsp. green creme de menthe liquor
1/2 gallon vanilla ice cream, softened

Combine cookie crumbs and butter. Press into bottom of 9 inch spring form pan. Fold creme de menthe into ice cream. Spoon over crust. Garnish with thin mints or chocolate curls. Serves 8 to 10.
