4 English muffins 1 (8 oz.) can tomato sauce 1/2 tsp. dry basil leaves 1/2 tsp. dry oregano leaves or powder 1/4 lb. Mozzarella or Monterey Jack cheese Grated Parmesan cheese (as much as you like) 16 slices salami or pepperoni (only if you have em) Carefully split open the English muffins and put them on a cookie sheet so that they don't touch each other. Open tomato sauce and put into a small bowl. Add the basil and oregano; stir up. Grate the Mozzarella or Monterey Jack cheese. Spread 1 to 2 tablespoons of the tomato mixture evenly on each of the muffin halves. Put 2 pieces of salami or pepperoni (if you have them) on each. Sprinkle the Mozzarella cheese on all 8. Sprinkle some Parmesan (if you have it) on each. Bake in a 400 degree oven until cheese melts, takes 15 to 20 minutes. Let cool a bit before eating. |
