CHEESE POTATO BALLS 
2 2/3 c. instant mashed potatoes, dry
1 1/2 c. water
2 tbsp. butter
1 tsp. salt
1/2 c. milk
16 (1/2 inch) cubes American cheese
3 tbsp. butter, melted

Set 1/2 cup potato flakes aside. Heat water, 2 tablespoons butter, and salt to boiling. Remove from heat; stir in milk and remaining potato flakes (will be stiff). Form into balls around cheese cubes.

Stir 1/2 cup flakes into 3 tablespoons butter. Roll balls in buttered flakes. Pale on ungreased baking sheet. Bake at 400 degrees until brown.
