THE EARTH'S FAMOUS VEGETABLE POT
PIE
 
2 recipes for whole wheat pastry
1 recipe for white sauce or 1 recipe "Golden Gravy"
1 sm. carrot, diced
1 stalk celery, sliced
1/2 c. chopped broccoli
1/2c. chopped cauliflower
1 sm. potato, diced
1/4 white onion, chopped
2 mushrooms, sliced
1 tbsp. vegetable oil
1/2 tsp. sea salt
1/4 tsp. black pepper

Preheat oven to 350 degrees. Roll pastry and cut out 8 rounds about 1" larger than pot pie tins. Line 4 pot pie tins with pastry rounds reserving the remaining 4 rounds for top crust. Prepare sauce and set aside. Steam all veggies except mushrooms and onion until tender. Saute mushrooms and onions in oil. combine all veggies, seasonings and sauce. Mix well. Generously fill pans with veggie mixture and top with remaining pastry sealing edges together with fork. Prick several air holes in the top to let out steam. Bake at 350 degrees for 20 minutes or until nicely browned.
