TURKEY TACOS 
1 lb. ground turkey
1/2 c. chopped onion
1 tbsp. prepared mustard
2-3 tsp. chili powder
1/4 tsp. salt
1 (8 oz.) can tomato sauce
1 (8 oz.) can tomato juice
1/2 c. shredded carrots
1/3 c. bulgar wheat (opt.)
Tortilla chips
1/2 c. shredded cheddar cheese

In a 10" skillet, cook turkey and onion until onion is tender. Drain and stir in mustard, salt, and chili powder, cook for 1 minute. Add tomato sauce, tomato juice, carrots and bulgar wheat. Bring to boil, reduce heat and simmer, uncovered for 10 minutes, stirring occasionally. Serve over tortilla chips. Add cheddar cheese over top.
