TOMATO PRESERVES 
11 c. peeled and quartered tomatoes
8 c. sugar
2 lemons, sliced thin
3/4 oz. ginger root or candied ginger (optional)

Add sugar to tomatoes and let stand overnight. Drain off juice and boil it rapidly until it spins a thread when dropped from a spoon. Add tomatoes, lemon, and ginger; cook until thick and clear. Can be canned in sterilized jars or used fresh.

This is nice where fruits and berries are scarce.
