CINNAMON FRENCH TOAST 
2 eggs
1 tbsp. milk
1 tsp. sugar
1/2 tsp. ground cinnamon
1/4 tsp. almond extract (some prefer vanilla extract)
4 slices bread, cut extra thick (1 inch French bread is good)
1 tsp. butter

Beat eggs, milk, sugar, cinnamon and almond extract together in large bowl - use fork or whisk. Saturate bread slices in mixture.

Preheat skillet - use Pam (or butter) evenly over surface. Put bread on skillet and cook on side one until egg mixture is set. Turn over and cook second side.

Serve with (warm) syrup and (or) jelly, jam or marmalade. Serves 2.
