WATER CHESTNUT SALAD 
1/2 head lettuce (in broken pieces)
1/2 c. finely cut celery
2 tbsp. chopped onion
1 can water chestnuts (drained and sliced)
1 pkg. frozen peas (partially thawed, but not cooked)
4 oz. shredded Cheddar cheese
3/4 c. Hellmann's mayonnaise with
1 tbsp. sugar

Mix peas, water chestnuts, celery and onions. Layer lettuce and this mixture in bowl. Cover with mayonnaise mixed with sugar. Top with grated cheese. Cover tightly with Saran wrap and refrigerate overnight. Can also be put in Tupperware bowl.
