Unlike most recipes that list amounts of ingredients, I'll just tell you how I fix them for a large family (6 people or more). In a large mixing bowl, beat 9 or 10 eggs, then crumble 3 large handfuls of tostados into the eggs and fold them in. Next, dice 1 or 2 good sized Anaheim peppers, a small to medium red onion, and a very large tomato; pour into egg mixture, folding as you add. The next part is preferential - I like to serve bacon with my Migas. After bacon is crisp, pour out all but enough grease to amply cover a large skillet. Make sure the skillet is hot when you spread your Migas mixture in the skillet. Turn fire or heat to medium low and cover. Then grate 2 cups Cheddar cheese. Uncover skillet and turn Migas over in quarters. Smash evenly into pan and cover with cheese. Put lid on; reduce heat and get the hot sauce and tortillas ready.. Then serve! Yum!!
P.S. Be prepared to go back to bed until the football games start!
