GRANDMA'S BLINTZES | |
SKIN: 7 eggs 2 1/2 c. flour 2 3/4 c. water POTATO FILLING: Cut up 10 potatoes, cook 8 minutes in pressure cooker. Cut up 5 onions and saute until brown. Mash together when potatoes are cool. CHEESE FILLING: Mix 2 1/2 pounds farmer cheese, 1 pound cream cheese, 1/2 cup sugar and 2 eggs. Beat eggs, put part of water in flour and mix it. Put in almost all of the water and mix with fork. Mix in eggs a little at a time, it will be very watery. Use a small frying pan. Grease and heat it. Put in batter and pour off excess. It is done when the edges curl up. Put on tablecloth sprinkled with matzoh meal. Fill them after they are cool. Can be frozen, wrap individually. |
