CHEESE BLINTZES 
4 eggs
1 c. flour
1 tsp. salt
1 c. milk or water
Oil for frying

FILLING:

1 1/2 lb. dry cottage cheese
2 egg yolks
Sugar and cinnamon to taste

Beat eggs and salt; add flour alternating with milk. Heat oil in frying pan. Pour enough batter to make very thin pancake, covering entire pan. Fry on 1 side until it blisters and shake out onto waxed paper. Combine ingredients for filling and put 1 tablespoon on browned side of pancake. Fold in side to form a square. Brown in pan or broiler. Serve hot with sour cream or applesauce.
