SPINACH BLINTZES 
4 c. milk
6 eggs
2 tbsp. butter, melted
Pinch of salt
4 c. flour
butter to coat pan

FILLING:

2 lb. spinach
2 tbsp. butter
1 lg. onion, sliced
1 tsp. salt
Pinch of pepper
2 tbsp. grated cheese

In bowl mix eggs, milk, salt and pepper. Melt butter in 10 inch skillet over medium heat. Pour in egg mixture. Tilt so uncooked eggs can set. While top is still moist, fill if desired. With spatula, fold in half or roll. Sprinkle with grated cheese before folding.
