HAM JAMBALAYA 
2 tbsp. oil
2 lg. yellow onions, chopped
1 lg. green pepper, chopped
2-3 cloves minced garlic
2 c. cubed, cooked ham, chicken or turkey
1 c. uncooked long grain rice
1/2 tsp. dried thyme, crumbled
1/2 tsp. salt
Tabasco sauce, several shakes
3 med. tomatoes, peeled & chopped or 1 (16 oz.) can tomatoes, chopped, with juice
3/4 c. chicken broth

Cook onions, peppers and garlic in oil until onions are soft. Add meat and rice. Stir until rice is well coated with oil, approximately 1 minute. Add seasonings, tomatoes and broth. Cover and simmer 20 to 25 minutes or until rice is tender and all liquid has been absorbed. Check after 15 minutes and add 1/4 cup water if necessary.
