JAMBALAYA SHRIMP 
1 tbsp. fat
1 tbsp. flour
1 lb. ham cooked and chopped in small pieces
1 c. cooked shrimp
1 1/2 c. cooked tomatoes
1 onion, sliced
1/4 tsp. thyme
1 clove garlic
1 green pepper, chopped
1 tsp. Worcestershire sauce
1 red pepper, chopped
4 c. water
1 c. uncooked rice

Melt fat and add flour stirring until smooth and slightly browned. Add ham, shrimp and tomatoes and cook for 3 minutes. Add onion, seasonings and peppers and water. Simmer for 10 minutes. Add rice and boil until tender about 30 minutes.

The mixture should not be stirred although it may be necessary to lift bottom of kettle to keep from burning from time to time. Keep covered during cooking.
