SHRIMP JAMBALAYA 
3 tbsp. butter
1/2 c. chopped onion
1 (16 oz.) can tomatoes
1 (6 oz.) can drained, sliced mushrooms
1 lb. peeled shrimp
1/2 sliced green pepper
Pinch cayenne, chili powder & basil
1 clove garlic
2 tsp. salt
1 c. long grain rice
1/2 lb. diced, smoked cooked ham
1/8 tsp. each pepper & allspice

Saute garlic and onion in butter until golden. Add ham and rice, cooking until rice is golden. Remove garlic and add seasonings, water, tomatoes and mushrooms mixing well. Add shrimp and sprinkle with green pepper strips over all. Cover and cook until water is absorbed and rice is done, about 15 minutes. Serves 8.
