JAMBALAYA PIE | |
1/2 lb. spicy Italian sausage links (about 4) 1 lg. or 2 med. green peppers, sliced into thin strips 1 lg or 2 med. red peppers, sliced into thin strips 1/2 lb. mushrooms, sliced 6 oz. flaked crabmeat 8 eggs 1 pt. sour cream 1 pt. cottage cheese 1 tsp. salt 1/2 c. all purpose flour 1/2 tsp. Tabasco sauce 1 c. grated Parmesan cheese 1 lb. (4 c.) shredded Jack or Cheddar cheese In large skillet over moderate heat, saute' sausage until browned on both sides. This should take about 20 minutes. Remove sausage. Cut it in half lengthwise and slice into thin rounds. In same skillet, saute' peppers, onions and mushrooms until soft and golden. Add pieces of sausage if they need more cooking. Remove all to a large mixing bowl. Stir in crabmeat. In food processor fitted with the metal blade or in blender, blend eggs, sour cream, cottage cheese, flour, salt and Tabasco sauce. Remove to bowl with sausage mixture. Add Parmesan and Jack cheeses. Taste and adjust seasonings, if necessary. Pour mixture into an ungreased 3 quart rectangular glass baking dish. Bake at 375 degrees for 40 to 50 minutes or until a knife inserted near center comes out clean and top is puffed and golden. Let stand for 10 minutes before cutting into squares. Yields: 12 main dish servings. |
