JAMBALAYA MAINE STYLE 
2 tbsp. butter
1 tbsp. flour
1/2 lb. cooked ham
1 lg. green pepper, diced
2 c. cooked shrimp
2 1/2 c. canned tomatoes
1 1/2 c. water
1 lg. onion, chopped
1/2 clove garlic, minced
1 tbsp. minced parsley
3/4 c. uncooked rice

Preheat electric skillet to 350 degrees. Melt butter, stir in flour; add diced green pepper and coarsely diced ham. Cook, stirring, for 5 minutes. Add shrimp, tomatoes and water, onion, garlic and parsley. Add salt and pepper as needed. Bring to the boiling point, then add the raw rice. Reduce heat to 200 or 225 degrees and simmer 30 minutes or until rice is tender and has absorbed most of the liquid.
