GARDEN LOAF 
3 eggs
1 c. packed brown sugar
1/2 c. honey
1 c. vegetable oil
2 tsp. vanilla
1 c. shredded carrots
1 c. finely shredded unpeeled zucchini
1 1/2 c. all-purpose flour
1 1/2 c. whole wheat flour
1 1/2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. nutmeg
1/4 c. coarsely chopped walnuts (optional)
1/4 c. raisins (optional)

In mixing bowl, beat eggs well; gradually beat in sugar and honey. Beat in oil and vanilla; stir in carrots and zucchini. Mix together all-purpose and whole wheat flours, cinnamon, baking powder, baking soda, salt and nutmeg; stir into vegetable mixture along with walnuts and raisins. Pour into 2 greased 8 x 4 inch loaf pans; bake in 350 degree F oven for 45 to 55 minutes.
