COCO RIBE COCONUT VELVET CAKE 
1 (2 layer) pkg. white or yellow cake mix
1 (4 oz.) pkg. instant vanilla pudding
1/2 c. flaked coconut
1 c. water
1/2 c. Coco Ribe liqueur (in white bottle)
4 eggs
1/2 c. vegetable oil

Place all ingredients in bowl. Mix on low speed to combine then turn to medium speed and beat 4-5 minutes. Pour into greased and floured tube or bundt pan. Bake at 350 degrees for 45-50 minutes. Cool on rack in pan 25 minutes, then remove.

FROSTING:

Mix additional 1/4 cup Coco Ribe liqueur with small size whipped topping. Sprinkle with plain or toasted coconut. Serves 8-10.
