ZUCCHINI CASSEROLE 
6 c. diced zucchini
1 c. chopped onion
1 grated carrot
1 can mushroom soup
1 carton sour cream
Salt and pepper
1 box Stove Top dressing
1/2 stick butter
1/2 c. grated cheese

Stir together vegetable and soup, sour cream, salt and pepper; set aside.

Melt butter, stir in seasoning from box and add mixture until coated. Add to vegetable and mix well. Bake in 9x13 inch dish. Top with bread crumbs. Bake uncovered in 350 degree oven for 45 minutes. Take out, put cheese on last.
