CARROT CAKE WITH CREAM CHEESE
FROSTING
 
CAKE:

4 c. flour
4 eggs
2 c. sugar
3 c. grated carrots
1 1/2 c. oil
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt

ICING:

1/2 c. butter
1 lb. XXX sugar
8 oz. cream cheese
1 tsp. vanilla
1 c. chopped pecans

CAKE: Sift flour and add eggs; mix. Add dry ingredients; mix. Add oil; mix. Fold in grated carrots. Pour into 2 greased and floured or lined cake pans. Bake for 50-60 minutes in 350 degree oven. Remove from oven and cool. Remove from pans and frost.

ICING: Combine butter and cream cheese; beat until light. Gradually add, while beating, XXX sugar. Add vanilla extract and pecans; mix well. Spread over and between layers. Decorate with pecan halves.
