SPANISH RICE 
2 c. rice
1 (No. 10) can tomatoes
1 med. or lg. sweet pepper
1 med. onion or 1/2 c.
1 1/2 tsp. salt
1/2 stick butter
1 1/4 tsp. cayenne pepper (or more, if desired)
1/2 lb. cheese, cheddar or American

In 2 quart pan, cook rice until tender. Add pepper, onions and tomatoes, simmer 15 minutes. Add other ingredients and 1/2 of cheese, to with rest of cheese. Brown cheese in oven for 6 to 8 minutes at 350 degrees. Serves 8 to 10.
