PICKLED ZUCCHINI 
4 qts. zucchini, peeled and sliced thin
6 med. onions, sliced
1 red and 1 green mango, cut up

Mix evenly by hand, put in plastic bowl or crock. Put in 1/3 cup pickling salts before you mix. Cover top with ice cubes, as soon as ice starts to melt - mix several times - mix well and let set for 3 hours. (Can squeeze between fingers).

Bring to boil:

5 c. sugar
1 1/2 tsp. turmeric
1/2 tsp. celery seed
2 tbsp. mustard seed
3 c. white sugar

Add drained vegetables and seal in hot jars. Cook vegetables about 5 minutes after adding to pickling syrup.
