STIFADO (Greek Beef Stew) 
3 lbs. lean beef, washed and cut into 1 1/2-inch cubes
3 lbs. sm. white onions
1 c. oil
1/2 head garlic, peeled
1/3 - 1/2 c. vinegar (to taste)
1 tbsp. tomato paste diluted with 1 c. water
2 bay leaves
1 sprig rosemary
Salt and pepper to taste
Water, as needed
