Tomatoes, cored 1 onion Zucchini(s) Summer squash(es) 1/4 c. butter Salt and pepper to taste This recipe is great for using extra garden produce on hand. 1. In a large covered frying pan melt butter. 2. Wash and slice up as many as desired fresh veggies in any combination desired. Fill pan. 3. Cover and simmer (ingredients will make its own juice) until tender. Do not overcook. 4. Serve as side dish to any main entree. |
