HALIBUT WITH GREEN PEPPERCORN
CREAM SAUCE
 
2 (7 oz.) halibut steaks

Bake halibut at 350 degrees for 15-20 minutes or until just starting to become flaky to the touch.

SAUCE:

1 c. heavy cream
2 tbsp. brandy
1 tbsp. dry vermouth
1 tbsp. green peppercorns
Salt and pepper
Real butter (1 stick)

In a saucepan, heat small amount of butter and saute green peppercorns for 1 minute; add brandy and vermouth, reduce by half; add cream, reduce by half. Season with salt and pepper.
